It was never heated; instead, as the name suggests, it was stirred cold, generally at room temperature. High-pressure processing is a technology used to preserve food. Its safety is comparable to that of other preservation methods, such as pasteurization. Hydrostatic pressures of up to 600 MPa (6000 bar) are applied, corresponding to the pressure at a depth of 60 km below sea level. The already bottled, untreated SANDICCA Frische Elixier is placed in a chamber, which is then sealed and filled with water. Powerful pumps then build up a pressure of approximately 600 MPa. The advantage of high-pressure processing is that the pressure is distributed with exactly the same intensity throughout the product, meaning that, unlike heating, there is no need to wait for the temperature to reach the core. The pressure thus generated is maintained for several minutes before being released again. This process always takes place in cold water, so the Frische Elixier is not exposed to any heat. The content of vitamins and secondary plant compounds (acids, pigments, antioxidants, etc.) is not affected by the process.

The non-thermal high-pressure treatment does, however, successfully achieve the desired destruction of pathogenic microorganisms, yeasts, and moulds, as the cell structures, such as membranes, and the biochemical processes of these organisms are sensitive to increased pressure.

The idea for Austria’s first fresh food supplement based on sea buckthorn berries originated at SANDICCA, while the implementation of this product innovation was carried out by a specialized, accredited institute with the involvement of scientific research institutions and the Austrian Agency for Health and Food Safety (AGES).

Storage tests in an accredited laboratory established that, due to the low pH value, the high natural vitamin C content of the sea buckthorn berries, and the high-pressure treatment, the Fresh Elixir can be stored at room temperature for 3 months. However, for sensory reasons, it is recommended to store the Fresh Elixir in a cool place. The Fresh Elixir is stored under refrigeration throughout the entire production process and until it is shipped to the end customer. An interruption in refrigeration for a few days, such as during shipping, therefore has no impact on product quality and shipping can take place regardless of the season.

Yes. To ensure the sensory quality of the unopened product, SANDICCA recommends refrigerated storage, such as in a refrigerator. After opening, the Fresh Elixir should also be stored chilled and used within 14 days.

There is no doubt that sea buckthorn is an important source of vitamin C. Even oranges, lemons and grapefruits contain only around 40–80 mg of vitamin C per 100 g of fruit, while blackcurrants contain just 150–220 mg. The wide range of vitamin C content is related to the origin of the fruit. Due to the absence of the vitamin-degrading enzyme ascorbin oxidase and the low pH value of 2.5, the vitamin C content remains constant even during storage. Studies by Arimboor et al. found between 35.6 and 36.4 g of titratable acids per kg of juice. The main component, at 18.1–19.9 g/kg, is quinic acid, followed by malic acid, with values between 11.8 and 14.8 g/kg, and citric acid, with values between 0.9 and 1.6 g/kg. These values may also vary depending on the origin of the sea buckthorn. Quinic acid is of outstanding nutritional and physiological importance. To make the high acid content palatable for humans, a “sweetener” must be added. To meet our commitment to using only natural ingredients for SANIDCCA products, we chose organic beet sugar from Austria. Artificial sweeteners such as stevia, acesulfame K, saccharin, thaumatin or aspartame were therefore ruled out; other common sweeteners, such as concentrated juices made from apples, pears or agaves, as well as coconut blossom sugar, were not suitable due to sensory differences or are difficult to obtain in organic quality.
